BURRATA BY IGNALAT, ALSO WITH BASIL:
INNOVATION AND TRADITION RECOGNIZED BY FOOD MAGAZINE

Apulian Burrata can evolve without losing its artisanal soul.

Caseificio Ignalat proves it, as we have been mentioned by Food magazine as top players in the dairy market. Our Burrate were also selected by the magazine as product novelties in the January 2025 issue.

This recognition confirms our company's commitment to combining tradition and innovation, bringing to the table a product that respects its local roots while surprising with a touch of freshness.

Ignalat's classic Burrata is already an excellence, but our latest addition, the version with basil, represents its gourmet evolution. With the addition of 100% Italian basil pesto, the creamy heart of the Burrata acquires pleasant and natural flavor nuances, delivering a unique and refined taste experience. This masterful combination has also impressed international critics, earning us a bronze medal at the World Cheese Awards 2024.

Vincenzo Ignazzi, CEO and Export Manager of Caseificio Ignalat, emphasizes that this product innovation is the result of a strategic vision: “The Burrata with basil represents our inclination to experiment and innovate, without ever betraying the artisanal quality that sets us apart.” This strategy seems to be working, as we recorded a significant increase in sales of specialties like Burrata in 2024, strengthening our position both in the national and international markets.

Despite an economic landscape influenced by high inflation, reduced consumer purchasing power, and elevated sales prices, and despite challenges related to the limited shelf-life of this fresh cheese, the overall demand for Burrata remains strong, especially at the international level. Today, it represents an important category for various market segments such as premium retail, horeca, and food service. The appreciation for the high-quality standards of this cheese has allowed us to overcome logistical barriers, proving that Made in Italy is truly synonymous with excellence.

Burrata: between tradition and evolution, excellence and experimentation

In an increasingly dynamic market, the demand for regional specialties and innovative products is constantly growing. At Ignalat, we have adapted to changing eating habits by offering a range of gourmet flavored and lactose-free Burrate. This diversification has allowed us to tap into new market niches, meeting the needs of consumers who are increasingly attentive to ingredient quality and health trends, seeking light and healthy options without compromising on taste. As a matter of fact, not only lactose-intolerant consumers but also those looking for lighter products are showing interest in these new offerings, transforming Burrata into a versatile and contemporary choice.

An evolving market: our outlook for 2025

The Burrata market is booming, but there are some challenges to face: limited availability of certain raw materials, shortage of skilled labor, production cost fluctuations, and uncertainties related to export. We at Caseificio Ignalat are ready to face these uncertainties with a strategy focused on innovation and craftsmanship as the main purchasing drivers. We continue to work on new launches both in Italy and abroad, investing in research and development, and focusing on authenticity and genuine flavor that only artisanal processing can deliver.

Global opportunities: focus on international markets

International markets represent fertile ground for our products.

Burrata continues to be one of the most sought-after cheeses, with particularly strong demand in neighboring markets - highlights Vincenzo Ignazzi - However, we are closely monitoring potential developments in the United States, where Trump's administration could introduce tariffs and trade barriers on fresh cheese imports, as well as in the UK or other foreign markets where protectionist policies may be introduced or reinforced to limit food imports”.

Being recognized as one of the leading players in the dairy sector by a leading industry magazine like FOOD is a source of great pride for us. This achievement is the result of the passionate work and experience of our team, the meticulous attention to quality, and the trust that customers and partners place in us every day.

2025 promises to be full of challenges but also new opportunities that we look forward to seizing with the same determination as always.
